INGREDIENTS

125g Butter, Softened
1 Cup (175G) Brown Sugar
1 Teaspoon of Vanilla
2 Eggs
2 Cups Mashed Banana
1¾ Cups (255G) Plain Flour
1 Teaspoon Baking Powder
1 Teaspoon Bicarb Soda
1 Teaspoon Cinnamon
⅓ Cup (115G) Honey or Golden Syrup
Butter - to Serve!

INSTRUCTIONS

Preheat the oven to 160°C. In an electric mixer, combine the butter, sugar, and vanilla, beating until they turn pale and creamy, which should take around 8–10 minutes. Remember to scrape down the sides of the bowl as needed.

Gradually add the eggs, beating well after each addition. Then, mix in the banana, flour, baking powder, bicarbonate of soda, cinnamon, and honey or golden syrup until everything is well combined.

Pour the mixture into a 26cm x 11cm (2.5 litre-capacity) loaf tin that has been lightly greased and lined with baking paper. Bake for 60–65 minutes or until a skewer inserted into the center comes out clean.

Allow the loaf to cool in the tin for 20 minutes before transferring it to a wire rack to cool completely. Slice and serve with extra butter on the side. This recipe serves 6–8 people.
