Creamed Honey

There is something almost magical about creamed honey. The way it transforms from a runny golden liquid into something thick, silky and cloud-like, with just time and a little patience. It spreads like a dream, melts slowly into warm toast, and has a gentleness to it that poured honey simply doesn't.

Here at The Werombee Hive, we make ours using honey straight from Stuart's hives — The Werombee Man — and honestly, once you've tasted creamed honey made from honey this fresh and this local, you'll wonder how you ever bought it from a shop. It's one of those things that feels a little like a secret, until you make it yourself.

INGREDIENTS

500 grams raw liquid honey (your best quality)

50 grams creamed honey (as a starter culture)

INSTRUCTIONS

1 - Gently warm the honey: If your 500 grams raw liquid honey (your best quality) has begun to crystallise, gently warm it to around 35°C until it is fully liquid again. Do not overheat — you want to preserve all the natural goodness. Allow it to cool back down to around 24°C before moving on.

2 - Add the starter: Stir 50 grams creamed honey (as a starter culture) into the cooled liquid honey. Mix slowly and gently — you don't want to introduce air bubbles. The starter is what gives creamed honey its smooth, fine-grained texture.

3 - Set and wait: Pour into a clean jar, seal, and place in a cool spot (ideally 14°C) for 1–2 weeks. This is the hardest part — but patience is everything here. The honey will slowly firm up into that beautiful, spreadable consistency.

4 - Store and enjoy: Once set, store at room temperature away from direct sunlight. Spread generously on warm toast, fresh scones, or straight from the spoon. It will keep for several months.

Creamed honey is one of those things that makes everything it touches a little more special. Here are some of our favourite ways to enjoy it:

  • Spread generously on warm toast or fresh sourdough — simple, and absolutely perfect

  • Serve alongside our Lemonade Scones in place of jam, or alongside both for the ultimate morning tea spread

  • Dollop over a bowl of Greek yoghurt with fresh berries from the garden

  • Swirl through your morning porridge instead of sugar for a gentle, floral sweetness

  • Use as a glaze for roasted vegetables or a honey-glazed leg of ham

  • Stir into a warm cup of tea instead of sugar — it dissolves beautifully

  • Spread over fresh crumpets straight from the pan

  • Serve on a grazing board alongside aged cheddar, crackers, and fruit — creamed honey and a sharp cheese is a combination worth knowing about

  • Use in place of liquid honey in baking — it works beautifully in our Honey Biscuits

  • Give a jar as a gift tied with twine — there are few things more lovely to receive than something homemade
